Lentil Soup Recipe

Last night I went over to me friend Jessamyn’s house and she taught this ol’ out-to-eat junkie what it’s like to actually cook at home- homemade Lentil soup nonetheless! I felt like I was on a TV cooking show i.e. dicing and caramelizing onions, learning how herbs pair together, drinking red wine, and interacting with a smiling host who certainly knew her stuff. Thanks for the cooking education Jess… I can’t wait for the next session! Now, for all to see, I wanted to post the recipe we whipped up so that you too could enjoy fresh homemade green lentil soup (it was a fun project, oh so tasty, and extremely economical):

- Put large pot on stove, turn heat on low, add 2 Tablespoons olive oil
- Dice up 1 large yellow onion and put in large pot, stir occasionally to caramelize onions
- Crush, finely chop up garlic and put in large pot with onions/olive oil
- Add 1 vegetarian bouillon cube
- Add 1 can diced tomatoes w/ basil and oregano (all comes in one can)
- Add 2 cups green lentils (found in bulk foods section of your local grocer)
- Add 6 cans water, bring to a boil, turn down to simmer, insert 2 bay leaves for good measure
- Let simmer for 1 hour, stir, check occasionally
- To release full flavor, after 1 hour, add one Tablespoon apple cider vinegar
- Dish up in bowl, garnish with dollop of sour cream, eat, enjoy!
